Created especially for exceptional bread making, Progressive Baker® Qualitate® patent flour is a premium, hard wheat flour milled from short, patent spring wheat. Short patent flour is straight grade flour of the finest quality, thoroughly refined and carefully milled to remove almost all of the bran.

Though the high protein content of Qualitate® flour makes it ideal for breads, its superior absorption, fermentation and mixing tolerance also give this versatile flour broad application potential.
